Celery

Celery is delicious used as a flavoring for stocks, soups, and sauces.  It’s also uses raw for dips or sliced in salads.  It is crisp, mild, with a refreshing light sweet flavor.  When is it cooked, it becomes dense and meaty and becomes sweeter in taste.  Celery is often used in weight-loss diets because it provides low-calorie dietary fiber bulk.

Waldorf Salad

6 medium celery stalks, with leaves
1 medium Granny Smith apple, peeled, cored and cut into ½ inch pieces
1 Tbs lemon juice
½ cup mayonnaise
2 tsp minced fresh tarragon or parsley leaves
½ cup toasted walnuts, chopped
Salt
Freshly ground pepper

Mince the celery leaves and set them aside. Trim any tough portions from the bottom and top of each celery stalk. Remove the stringy fibers from outside of stalks. Slice the celery crosswise into thin pieces.  Combine all ingredients up to the seasonings. Add salt and pepper to taste. Chill for 1 hour and serve. (Can be refrigerated overnight) (Serves 4)
